Broccoli Cheese Soup


I decided to try this Recipe for Broccoli Cheese Soup out of Tiffany's cookbook & It turned out pretty good. We substituted the Velveeta for cheddar not knowing that I should have put much less cheese, But it still turned out well, so here's the recipe.
10 oz pkg frozen broccoli
1/2 cup carrots, grated
1/2 cup onion, chopped
1/2 stick butter or margarine
1/4 cup flour
2 cups milk
1 lb Velveeta, cubed
pepper, to taste
Combine vegetables in saucepan and cook until nearly done. Melt butter in medium saucepan or soup pot. Stir in flour until smooth. Add milk, stirring constantly. When mixture becomes thick, add cheese and stir until melted. Add vegetables and pepper, mixing well. Heat thoroughly. enjoy!
