Andes Mint Chocolate Cupcakes!



Here is a recipe for Andes Mint Chocolate Cupcakes! Yum.. I totally forgot to take a picture untill my husband went to eat the last one. I promise they taste better than they look ;) I found the recipe at     sugarmonkeysweets

Cupcakes


1 box of chocolate cake mix
Mix the ingredients as stated on the box (oil and eggs)
Add 1 cup of sour cream
Add 1 cup of sugar
Add 1 cup of flour
Generous dash of salt
1 tablespoon of vanilla extract

Mix everything together and pour in a prepared cupcake pan. Bake at 350 for 10-12 minutes or the time stated on the box and depending on how your oven works. When the tops spring back when touched then you will know that the cupcakes are done. Take the cupcakes out and put them on a cooling rack to cool before icing.

Mint Frosting From strawberryswingandthings
Ingredients

1 cup (2 sticks) of unsalted butter, room temperature
6-8 cups of powdered sugar ( I think I only used 6 or 7)
1/4 cup of milk
3/4 tsp peppermint extract
1/4 tsp vanilla extract
6 drops of green food dye
2 drops of yellow food dye

Directions

1. In an electric mixer, beat the butter at medium speed until creamy. Beat in milk and then peppermint and vanilla extracts.
2. Slowly add in the powdered sugar on low speed, stopping every now and then to scrape down the sides of the bowl, until light and fluffy. Taste and add more mint extract if it isn't minty enough for you, or powdered sugar if it isn't sweet enough for you.
3. Finally, add food dye for "mint" green color.
